The machine uses a temperature sensor and a fan system to cool the keg down to the desired temperature.
While cooling the machine will occasionally enter a defrost state to protect the longeivity of the components, but this is factored into the expected cooling time.
If you set the temperature to higher than it is currently set to then the machine will turn off the cooling until it reaches the desired temperature. In extremely cold environments the temperature of the keg may drop the selected temp.
